So, how do I whip up this delightful concoction? Funny you should ask! First things first, I gotta get my rice cookin’. I love using brown rice ’cause it’s got that nice, chewy texture and packs a punch in the nutrients department. Of course, plain ol’ rice won’t do – it’s high time for jazzin’ it up a bit! - 1 cup diced bell peppers
- 1 cup cooked black beans or chickpeas
- 1 cup Greek yogurt
- Optional toppings: chopped nuts, fresh herbs, grated cheese, lime wedges
